A 16ft food trailer built in 2024 for Sizz’lin Street Bites in Longmont, Colorado. Cheesesteaks, Reubens, a birria grilled cheese, wings and loaded fries: a griddle menu, a fryer menu and a hot holding menu on one line. The owner designed the wrap herself.
The hot line is a 36 inch Atosa griddle and a two burner hotplate sitting on a 36 inch refrigerated chef base, two 40 pound Atosa floor fryers so wings never wait behind fries, and a two pan propane steam table. Across from it are a 27 inch sandwich prep, a standup refrigerator and a standup freezer.
Everything was laid out in CAD first, which is why the chef base drawers open all the way and the fridge and freezer doors clear each other. The hood overhangs the line by six inches on every side as the code requires, and the roof fan has a grease trap so nothing runs down the wrap. ANSUL suppression, Class K and ABC extinguishers, a self closing three section window, a ram door, lockable propane cages and a generator on a pull out tray with a 10 gauge cord.
In Longmont the health licence comes from Boulder County Public Health, the city requires a Mobile Retail Food Vending Permit and a sales tax licence, and Longmont Fire inspects every unit once a year and caps propane at 60 pounds.
