12ft Taco, Burrito and Coffee Food Trailer, El Paso County, CO

12ft white enclosed food trailer with double axles and a caged propane rack, built for El Paso County, Colorado

A 12ft food trailer doing tacos, burritos and coffee, built for a customer in El Paso County, Colorado. Most people assume a wide menu needs a big trailer. It does not. It needs a line one cook can work without walking.

The hot line is all Atosa CookRite: a 24 inch griddle with a three quarter inch plate, a two burner hotplate for rice and beans, and a floor fryer, under a Type 1 hood with fire suppression. Across the aisle is a sandwich prep table and a low height reach in refrigerator, and there is a work table left for an espresso machine. Choose that machine first, because a full size two group machine needs a 220 volt circuit and a compact one runs on 120.

The trailer is seamless, with no screws or rivets through the skin for water to find, and sits on heavy duty double axles with a ram door at the back and a 5ft service window. The propane tanks live outside on the tongue in expanded metal cages and the gas lines run under the floor, so any leak vents to open air rather than into the kitchen. Every circuit is home run wired to its own breaker, every piece of equipment is bolted down with washers, and it is stainless throughout with an aluminium diamond plate floor.

In El Paso County the health licence comes from El Paso County Public Health after a plan review. Inside Colorado Springs you also need a city sales tax licence, and a Mobile Food Vendor License to sell from the public right of way.
