A drinks truck is a different build from a cooking truck. There is no fryer, no grease hood and no fire suppression, so the work goes into water, ice, power and speed at the window. There are two water fills on the outside, one for ordinary water and one for purified water for the drinks. Ice comes from an Atosa undercounter machine making 142 pounds a day with its own filter cartridge, and hot water from a 7.6 gallon boiler.
The bar is a 71 inch bubble tea workstation with two sinks and hot and cold water on tap, with a Vitamix Quiet One blender in a sound enclosure, a double induction hob and an automatic cup sealer, the first sealer we have fitted in a build.
Power comes from three places: shore power, a dual fuel generator in a lockable box, and a battery bank of about 8 kilowatt hours strapped down under the counter, with a transfer box to switch between them. The whole kitchen is electric, water heater included, so the truck can trade on battery at a farmers market or a wedding where nobody wants to hear a generator.
There is a 5ft by 3ft service window and a separate display window for merchandise, a low height reach in refrigerator, a three compartment sink and a hand sink, 30 gallons fresh against 40 waste, and every water circuit can be drained for a hard freeze.
