A 16ft taco truck converted from a 2019 Ford E350 box truck for Tacos del Sur in Aurora, Colorado. Most of what we build starts as a step van. This one started as a used fleet box truck, which is a different job.
A box truck has no way through from the cab, a roll up rear shutter and a box made of fiberglass skinned plywood. So the inside of the box got its own framing to carry the equipment, the shutter came out and was replaced with a proper RV door with a screen, and the kitchen became a sealed room with one way in.
The line is built around a 48 inch Atosa griddle with four 30,000 BTU burners on a three quarter inch plate, next to a 12 inch two burner hotplate. Both sit on a refrigerated chef base with a sixty inch extended top, so the whole hot line fits on one base with the cold drawers underneath. There is a 48 inch sandwich prep table for toppings, a three pan propane steam table and a low height reach in.
Over the line is an 8ft hood with a 1,650 CFM fan and ANSUL fire suppression. It deliberately runs over the steam table too, so the owners can swap it for a second griddle or a fryer later without new ductwork or a new fire inspection. There is a 5ft self closing service window, a three compartment sink and a hand sink, underbelly propane, a 9,500 watt generator in its own box, and every circuit labelled on the panel.
Aurora spans three counties, so the health licence comes from Arapahoe, Adams or Douglas County depending on where the truck is based. The city requires a business licence that covers sales tax, and Aurora Fire Rescue permits any truck that produces grease laden vapour.
