A twenty foot Jamaican jerk chicken truck delivered to Laramie, Wyoming, with the back six feet left open as a porch so the charcoal smoker never had to come inside the kitchen.

Jerk chicken cooked over gas is a different dish, so the fire had to be real charcoal. Rather than fight a solid fuel appliance into a working kitchen, the rear six feet of the body was left open as a porch. A sixty inch Backyard Pro charcoal and wood smoker stands in it on braked casters, under a stainless canopy with its own exhaust fan, and an RV door with a window in it separates the porch from the line.

Inside, a six foot Type 1 hood with wet chemical suppression covers an Atosa 36 inch range with a 24 inch griddle, a 40 pound fryer and an 80,000 BTU stock pot stove, with an Eagle Group four pan steam table under a five by three foot self closing service window. Cold storage is a low height reach in and an undercounter freezer. Water is 30 gallons fresh against 40 waste with an eight gallon heater, plus a three compartment sink, a hand sink and a mop sink. Power is a 125 amp panel with every breaker labelled, backed by a Westinghouse 12,500 watt dual fuel generator in an insulated box.

Laramie is unusual for Wyoming in that the city runs its own Environmental Health Division and issues the food service licence itself, with a separate mobile vending licence on top.
