A 16ft fancy toast and iced coffee trailer, delivered to a pair of owners in Boulder, Colorado. At their request we are not naming the business.
It is not a normal trailer. They wanted it to work as a commissary as well as a service unit, so it carries a prep sink, a three compartment sink, a hand wash sink and a mop sink, 75 gallons of fresh water and 90 gallons of grey, both insulated, and a second floor drain. Boulder County Public Health approved it to operate as its own commissary, which is what lets a unit service itself instead of paying somebody else for kitchen access every month.
The cook line is built around a conveyor oven rather than a fryer or a griddle. A conveyor oven is consistent, it does not need a skilled cook standing over it, and because it is not producing grease laden vapours the code would have allowed a Type II hood with nothing over it. We fitted a Type I hood with fire suppression anyway, to future proof the trailer for a menu that grows a fryer later.
Also on the trailer: a refrigerated sandwich prep set in the middle of the hood at the owners request, a chest freezer, two refrigerators, prep and work tables, power set aside for a coffee machine, a self closing service window with an outside shelf, a ram door and a separate man door with RV steps on both, stainless walls over plywood and insulation, rubber coving at the floor, an aluminium diamond plate floor, ventilated propane cages with the gas lines under the floor, and a generator in an insulated lockable box that slides out for service.
Boulder is one of the harder Front Range cities to trade in. The health licence comes from Boulder County Public Health, the city runs its own Mobile Food Vehicle licence on top of a business licence, and Boulder Fire-Rescue has to sign off before the city licence is issued.
