A 14ft roasted corn and elote truck on a Chevy box van, delivered to Sweetly Roasted in Lakewood, Colorado. Roasted corn, elote, spicy elote and elote cups, out of a dark green wrap that carries the whole menu down the service side.
The cook line is a large floor fryer, a two burner stove and soup pots under a Type I hood with fire suppression, with a 48 inch refrigerated prep and a separate ice cream freezer on the cold side. A cheese dispenser holds and portions nacho cheese, and a snow cone machine keeps the window busy through the afternoon rather than just the lunch hour.
The unusual part is the power. The owners chose not to fit a generator at all and to run the truck on shore power, using the generator box for dry storage. That works for a route built around brewery lots and city events where power is already on site, and it saves money, weight and noise. The box is still built and vented, so a generator can go in later.
Also on the truck: underbody propane tanks with a custom cage door fabricated because this truck sits low, an exhaust fan with a grease catch pan, a self closing service window with an outside shelf, colour matched LED outside and shielded LED inside, rooftop air conditioning, an aluminium diamond plate floor, trim between every wall panel, and every appliance on its own breaker with all wiring in conduit.
Lakewood sits in Jefferson County, so the health licence comes from Jefferson County Public Health and the fire permit from West Metro Fire Rescue. Lakewood itself does not issue a food truck permit.
